We came home with 2 watermelons from the Farmer's Market this weekend.  Phoebe entered a watermelon roll at the last minute and couldn't bare to part with her prized melon.  
On the way home, she came up with the following "recipe" - it's actually just a kid-made version of Watermelon Agua Fresca.  Quite easy and tasty.  I think we might be making it in my classroom next year.
Phoebe's Watermelon Juice
*watermelon chunks (about 2 large ones per serving)
*a little bit of water (I'm guessing we used about 1/4-1/2 cup)
*crystalized sugar sprinkles (pink or red is best)
Step 1:  Mash watermelon and water together in a bowl.
Step 2:  Add 3 shakes of sprinkles.  If you don't have sprinkles, you could use sugar, but that's not as much fun.  Mix up real good.
Step 3:  Pour into a glass with ice.  Yum!  Phoebe also recommends adding some lemonade if you have it.
Adult Note:  This version is a little chunky, but it tastes great.  Eric and I like to add some lime juice and a pinch of salt to ours.
